Courgette is a vegetable which we look forward to all winter and spring, and the first dish of the year is always quite special!
A really easy plant to grow - we sow seeds for the first plants of the year in early April, and a second lot in July - this way when the early plants have finished producing fruits the second set are just starting!
We use courgettes in soups, stews, stir fries and in a lovely mashed potato and other veg dish... Wash and chop the potatoes and boil for 20 minutes. Remove from thje water and mash with a bit of olive oil. Meanwhile stir fry onions, courgettes, carrots, corander roots and garlic. Add the vegetables to the mashed potatoes and fold in. Spoon into a
serving dish (leave the top off), add a bit of sesame oil on top of the dish and
pop into a hot oven for
20 minutes.
A courgette plants usually produces about 50 fruits - if left on the plant they grow into marrows!

From a small seed the courgette quickly grows into a large plant - we start the first set of seeds off in pots and then transplant to the polytunnel beds leaving a lot of room to allow for the growth of the plant - see the photo below left!
